Chocolate Cake

I do like baking and I also love eating them as well (well who doesn’t!) At the moment, as I am near to where I want to be weight wise, I do not want to jeopardise it by making sticky, gooey, chocolatey cakes and the like. Or even Nigel Slaters cookies of which I am slightly obsessed.

reading that back it sounds that once I get to where I feel comfortable then I am going to start gorging on everything again. That is the challenge not to but perhaps I might cut myself a bit if slack when it comes to cakes and baking.Knowing that I can lose the weight.

Anyway to the picture and the cake – it is a Chocolate Cake and it too 7 minutes to cook and probably 7 minutes to make as well! The recipe is rather odd but for all those interested here it goes:

5 Scan Bran

3 beaten eggs

1 level tbsp golden syrup

1oz cocoa powder

½ mug sweetener

1. Soak the Scan Bran in boiling water to soften. Then drain and mash. This bit looks really horrible but it is worth it.

2. Mix all the ingredients together and pour into a microwavable bowl.

3. Microwave on high for 7 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.

Really quite simple and yes in 7 minutes it was cooked. Having tasted it I did not put enough sweetener, how much is half a mug? So I was a bit cautious in how much I put in. However it was really quite chocolatey and coca-ey (not a word I know) and I cut into 8 pieces it was really filling with my cup of tea whilst reading on Sunday afternoon.  I think it will taste lovely warm and covered in fresh fruit with some fromage frais on and it will make a lovely pud as well instead of yoghurt!

I am going to give it another go this weekend, and will perhaps try some of the other varieties, Banana Cake or Carrot Cake. I used the oat bran not the scan bran so I will buy some of that this week and see if it makes a difference as well. The remainder I am going to attempt to make Scotch Eggs! Watch this space for that creation!
